As Christmas is famous for the festive time of the year of
giving, we thought to give Pancakestories another Chrismas - Special and you,
our most beloved readers, two new ways to celebrate the holidays with style!
Therefore, we came up with two great ways to give out favourite breakfast-dish
the X-Mas-Trearment it truly deserves.
We will start with a funny new shape AND taste:
Gingerbread-Pancakes! Besides chocolate and speculoos (Verlinkungen von
Spekulatius und chocolate-pancakes), gingerbread is on of the most used spice
during this time of the year and its long overdue to give it a dedicated stack!
For the pancakes:
170g whole wheat flour
40g almond flour
20g almond, chopped and roasted
30g brown sugar
4g baking soda
4g baking powder
pinch of salt
pinch of cinnamon
4 eggs
1 teaspoon gingerbread spice
2 teaspoons unsweetened cacao-powder
For the icing:
2-3 Tablespoons lemon-juice
50g powdered sugar
- First things first. Before we collect all the dry ingredients in one small bowl, place a skillet on medium heat and give the almonds a little roast. But be careful - don't let them out of your sight for too long… during your almonds are on the stove, gather the flour, sugar, almond-flour, pinches of salt and cinnamon with the right amount of baking powder and baking soda and don't forget the special ingredient: gingerbread-spice.
- The roasted almonds need some time to cool down, before you start chopping them in small pieces and add them to the flour. Take a large bowl and a small one and separate the eggs. Add some melted butter to the yolk and whisk it firmly. Same goes for the egg white, after adding 100-120ml of buttermilk.
- Take it slow with the following step: pour the beaten yolk into the egg white mixture and add your dry ingredients carefully: you don't want to destroy the foamy egg white of yours now, do you?
- The batter will need some time to chill down, which gives us the time to quickly whisk a simple lemon-powdered sugar grace together. Just take some lemon-juice and give in some powdered-sugar while using a sifter. Done!
- Preheat your pan and get cooking! Of course, you could eat those pancakes as they came out there - but to get you in christmas-mood big time, just grab a cookie-cutter and cut your favourite shapes out! Hearts, dolphins or skulls - you name it! We went for a classical gingerbread-man. Build a nice stack, pour some glaze on it and add some of your roasted almonds.
