Salty Caramel Pancakes with Chocolate Pretzels and Peanut Butter

Having a plate of these pancakes will make you happier than any chocolate bar ever could. What we got here is a pile of thick and fluffy buttermilk pancakes with creamy peanut butter between them.. But the party is on the top - homemade caramel sauce, chocolate covered pretzels, salty caramel splinters and some more melted chocolate. Is your mouth watering now? Let's get started then!

For 300g sauce:

130 g cream (might be called whip cream in stores)
60g butter 
150g regular sugar
3 tablespoons water

  1. First heat butter and cream in a small pot on a stove until the butter is melted (you can do that in a microwave too). 
  2. In a second big pot slowly heat water and sugar (it really needs to be a big pot, otherwise you will be covered in hot splatters after cooking). 
  3.  Let the big pot boil while you stir water and sugar until they reach that typical amber color. Timing is very important here!
  4. Now pour the melted butter and cream from the small pot into the big one. It will now boil and splatter. Immediately take it from the stove and stir well.
  5. If you feel like adding a little bit of flavor (for example liqueur) add it now, otherwise skip this step.
  6. Put the sauce in a jar right away and let it cool without putting the lid on top.You did it! This sauce can be poured on pancakes, baked goods or just be used as a dip. If the sauce hardens just put it in a microwave for a little bit.

For the caramel splinters:

plastic box
baking parchment

100g sugar
a little bit of sea salt

The ones that we made that day are made of just 100 grams of sugar. Take a flat plastic box (any tupperware will do the trick) and put baking parchment inside. This is where you will be pouring the super hot caramel. Heat up the sugar in a well coated pan. It will soon start to melt and change its colour into a light brown. When the sugar reaches this phase take it from the stove. Be careful and pour it into your prepared box. Before you put the box into the fridge sprinkle some sea salt over it. We used real "fleur de sel" we brought from a recent trip to Bordeaux, France. The salt gives the sweet caramel that special twist. When the caramel hardened up take the box out of the fringe and crush it into bite sized pieces.

For the pancakes:

2 small bowls
1 large bowl

250g white flour
35g + 15g white sugar
4g baking powder
4g baking soda
pinch of salt

4eggs
100ml buttermilk
50g melted butter

pack of small pretzels
1 pack of milk chocolate
some peanut butter
caramel splinters and caramel sauce

  1. Lets get started with ye batter! Grab two small bowls and a slightly larger one. Use the first small bowl to mix your dry ingredients together: flour, 35g sugar, baking soda, baking powder and a pinch of salt. Set aside. 
  2. Separate your eggs and put egg whites into the big bowl and the egg yolk into the second small bowl. Melt 50g of butter (for example in a microwave) and let it cool off before you add it to the egg yolk. Put 15g of sugar into the same bowl too and whisk it good! 
  3. Well done! You want to stir the egg white so it gets a little foamy. Now add 100ml of buttermilk. Pour the egg-yolk-butter-mixture into the big bowl. Keep whisking. 
  4. You’re almost there! Carefully pour the contents of the small bowl with dry ingredients into the big bowl. Carefully mix everything, don't whisk too eager, otherwise the batter will lose the fluffiness. Turn on the stove (little bit below medium heat). When the pan is hot enough pour in the batter, don't use any oil. Let it sit until bubbles appear - you can flip the pancakes now! 
  5. After you are done with flipping, get your peanut butter between these bad boys and build a stack. The time has come to bring the chocolate coated pretzels into the game -put them on top. Decorate with a couple of caramel splinters and garnish with the homemade caramel sauce! We also poured some chocolate on everything (just melt the milk chocolate in a microvawe). Bon appetit!
