As much as we love pancakes, every once in a while we like to cook and bake other things and today let us show you an easy way to make your own chewy caramel candy. Remember our Salty Caramel Pancakes with Chocolate Pretzels and Peanut Butter? The recipe included some yummy hard candy, so we decided to make an extra recipe for soft and chewy caramels - you can use it for the Pancake stack or as a sweet treat of it's own. Let's get started!

Utensils:
1 tin with baking parchment (size:20x10cm)
1 pot, medium-size
1 glass of ice water
1 small spoon
1 sharp knife

Ingredients:
250g sugar
260g whipped cream
30g butter
60g honey (go for the clear liquid honey; any sugar crystals would make the candy lumpy)
(optional) feel free to add a flavor like cinnamon or vanilla


Start by measuring all your ingredients and putting them in the pot. There is no specific order, just throw it all in there! If you want any extra flavors, now is the last chance to add aroma. Put the pot on a bit more than medium heat, it has to reach the boiling point eventually. This make take 10 minutes. As you will see, the color will change during the whole process. In the beginning the mixture is light brown/beige. When the pot starts boiling, reduce the heat and start stirring the caramel lightly for the next 15 minutes. The color should be a darker shade of brown by now, classic caramel color.

Now it's all about the timing! If you keep the caramel in the pot for too long, it will become too hard to actually put it in your prepared tin. But how can you tell when you are done? You got that glass of ice water? Good. In this step we will check the constancy of the mixture by taking some caramel with a small spoon and putting it in the ice water for one minute. Get it out of there and have a look at it. If  the caramel is slightly thick but you can squeeze it a bit, that's pretty much perfect! But if the caramel dims the water you need to keep it on the heat a little longer. If it is hard then add some more whip cream into the mix.

Almost done, you're a champ! When your caramel mixture passed the test, it is ready to be filled in the prepared tin.  Let it cool down for 2-3 hours and relax. Then get your knife skills going and chop the big caramel pump into tiny little pieces. To make the packaging more fancy wrap the little caramel bites into white baking paper. Now you can give your loved ones this sweet and chewy deliciousness as a present (unless you already ate the candy yourself, then just make a new batch).
